 So, there I was. Seating down, regarding nothing, now and then a morsel of semisoft cheese popping in my mouth when this felt on my lap ; a bottle of a dark sparkling wine. 40 years ego, sparkling wine cut only be rose', so I was  unaccepting, however, something else appeared promising, the wine was produced in Clerendon, Australia and those guys had been putting out some good wine for my money.

After a few more semisofts, the bottle cool down to about 47 deg f., I poured it, it sang in the glass as it released bursts of energetic bubbles, it was fine music to my senses. The aroma heated my nose and it was another welcoming sensation.

As I follow the " empinating " motion of my elbow, a blast of fresh, bubbling, aromatic, solid flavor and body elixir, hugged my mouth and it was good. It went in a  seductively cadence down thru me. And then I wanted more. It has been over a year since and all my friends and all my family enjoys this splendid wine very much. Try it. you will not regret it, it goes with any food, tapas, meats, vegetables, fish... is good all year round.

The wine is " PARINGA SPARKLING SHIRAZ 05 ", we pay under $9 per 750 ml bottle.

The semi was ASIAGO FRESCO, from Italia, a little expensive at just under $9 a lb., but it has a spunky lime flavor that entices your palate time and again.
